2 lbs potatoes, cubed
water to cover
1 cup almond or coconut milk
1-2 TBS coconut oil or grapeseed oil
1-2 tsp sea salt
Place cubed potatoes in pot with enough water to cover them, heat on high with a rapid boil for 10-15 minutes, or until a fork easily pierces them.
Drain water and add milk, oil, and sea salt. Mash until creamy.
