Mango Jicama Salad with Cumin Dressing
Adapted from Pampered Chef Recipe "Cool & Crunchy Chicken Tacos"
1 head of romaine lettuce
1/2 small jicama
1/2 cup loosely packed fresh cilantro
1/4 tsp salt
1 avocado, peeled and sliced
1-2 limes, divided
1/2 cup vegan mayonnaise
2 tsp ground cumin
1/4 tsp cayenne pepper (optional)
1. Shred lettuce. Zest limes to measure 1 tsp. Juice limes to measure 3 TBS. Place zest, 1 TBS of the juice, mayo, cumin, and cayenne pepper in bowl to mix well.
2. Peel jicama and mango. Slice jicama with a Mandoline fitted with v-shaped blade. slice jicama and mango into 1/4-in. strips. Chop cilantro. Combine jicama, mango, cilantro, salt and remaining juice in bowl to mix well.
3. Divide lettuce in bowls and combine mango/jicama mixture and then top with cumin dressing. Enjoy.
