Pono Purple Potato Salad

2-3 medium purple sweet potatoes, 1/2" cubes (about 3 1/4 cups)
3/4 cup Vegan mayonnaise
1/2 cup celery, sliced thin
1/4 cup red onion, diced
2 tsp apple cider vinegar, raw
2 tsp Bragg Liquid Aminos (soy sauce)
2 tsp dill, fresh minced
1/2 tsp garlic, minced
1/2 tsp black pepper
1/4 tsp crushed red pepper flakes
Sea salt to taste
1. Wash potatoes well. Chop into 1/2" cubes, place In a steamer basket in a 3 qt. pot and steam until potatoes are soft, approximately 15 minutes. Please do not overcook
2. Combine all ingredients except potatoes in a large mixing bowl and whisk well.
3. Add potatoes and gently mix well.
Variation: Purple sweet potatoes- also known as Okinawan sweet potatoes- are an island delicacy. If you cannot find them, you may experiment with yams or any potato of your choice.
