Warm Pasta Salad

"Greatest Ever Salads" by Fall River Press
Serves 4

8 oz. dried farfalle or other gluten-free pasta shapes
6 pieces of sun-dried tomato in oil, drained & chopped
4 scallions
1 1/4 cups arugula, shredded
1/2 cucumber, seeded and diced
salt & pepper
2 TBS Vegan Parmesan cheese (optional)

4 TBS olive oil
1 TBS white wine vinegar
1/2 tsp sugar
1 tsp Dijon mustard
salt & pepper
4 fresh basil leaves, finely shredded

1. To make the dressing, whisk the olive oil, vinegar, sugar, and mustard together in a bowl or pitcher. Season to taste with salt and pepper and stir in the basil.

2. Bring a large heavy-bottom pan of lightly salted water to a boil. Add the pasta, return to a boil, and cook for 8-10 minutes, or until tender but still firm to the bite. Drain and transfer to a salad bowl. Add the dressing and toss well.

3. Add the tomatoes, scallions, arugula, and cucumber, season to taste with salt and pepper, and toss. Sprinkle with the Parmesan cheese and serve warm.
