Strawberry, Apricot Fudge Balls
"Raw Food for Everyone" By Alissa Cohen
Makes: 30 fudge balls
2 cups dates, pitted and soaked in water for 2-8 hours
1 cup dried apricots, soaked in water for 2-8 hours
1 cup almond butter
1/2 cup carob powder
3/4 cup strawberries
1. Put the dates and apricots in food processor and blend to a smooth paste.
2. Add the almond butter, carob powder, and strawberries and process until smooth.
3. Remove from processor and form into 1-inch balls. They will keep for several weeks in the refrigerator, but they're so good they most likely won't last that long.
