Substitutions for Vegan Cooking/Baking

There are many ways to substitute dairy, eggs, and meat in recipes.

Dairy- (Use in recipes measure for measure.)

Milk Substitutes- coconut milk, almond milk, soy milk, hemp milk, rice milk
Yogurts- Whole Soy, White Wave, Nancy's
Sourcream/cream cheese- Tofutti, Soymage Vegan
Cheese- Daiya cheese, Tofutti soy cheese slice, Soymage Vegan Singles, Vegan Rella, Soymage Vegan Parmesan Style, Vegan Gourmet Cheese Alternative, homemade nut cheese (cashews, almonds, pumpkin seeds)
Butter- Spectrum Naturals, Melt, Any oils: Olive, Safflower, Sesame Sunflower, Grapeseed and Coconut oil. (For the oils- if the recipe calls for butter and you use oil, halve the amount.)

Eggs- (use one of these substitutions for ONE egg)

-1/4 cup silken, firm, or extra firm tofu, pureed
-1/4 cup pureed bananas or applesauce, plus 1/2 tsp non-aluminum baking powder
-2 TBS nut butter- peanut, almond, cashew, or tahini
-1 TBS flaxseeds, finely ground plus 3 TBS water. Wait 10-15 minutes to form a gel
-1 TBS Ener-G Egg Replacer whisked with 2 TBS water
-1 TBS cornstarch whisked with 1 TBS water

Gelatin

-These brands: Emes, Hain
-Agar, Agar

Cane Sugar

-Evaporated Cane Juice
-Organic Unbleached sugar
-Raw sugar
-Turbinado sugar
-Demerara sugar
-Beet sugar
-Dates
-Maple syrup
-Agave Nectar

-Brown Rice syrup

Chocolate

-Endangered Species Chocolate Company

Icecream- (coconut, nut, rice or soy-based icecreams)

Brands- Soy Dreams, Coconut Dream, Rice Dream

Meats

Beans: black, navy, pinto, chickpea, lentils, split peas
Grains: brown rice, quinoa, millet, basmati rice, jasmine, short grain rice, wild black rice
Soy: tofu, temph, TVP (textured vegetable protein- can be purchased in bulk section in small flakes or big pellets. It is used for making "ground meat" substitutes)
Mock meats: soy- hotdogs/hamburgers, deli slices- ham, turkey, and bologna flavors, bacon, pepperoni, meatballs, sausages, thanksgiving turkey and vegan jerkey
Seitan: known as wheat meat, it has a firm chewy texture that works well in recipes that call for meat.
